ROAST LEG OF LAMB
Serves 8-10
INGREDIENTS 1 leg of lamb (approx. 1 ½ kg) 1 kg potatoes, small 2 cloves garlic ½ cup olive oil 1 teaspoon oregano 1 sprig rosemary 1 teaspoon salt 1 teaspoon pepper
DIRECTIONS Rinse the leg of lamb and pat it dry with kitchen paper. Using a sharp knife, make 4-5 incisions on the meat to insert a piece of garlic. Rub the leg of lamb with a little mixture made from a little salt, pepper and oregano. Place the lamb in a baking dish; arrange the potatoes around it and sprinkle the entire ensemble with the olive oil, salt and pepper to taste, oregano and rosemary. Insert the dish in the oven the cook at 180oC for 60-80 minutes. Serve warm.
