GROUPER WITH LEEKS
Serves 6

INGREDIENTS 600gr white grouper 400gr leeks, cleaned and chopped 400gr fennel ¾ cup olive oil 1 medium-sized tomato, finely chopped 1 medium-sized onion, chopped 1 small lemon, the juice salt and pepper to taste
DIRECTIONS Use a pan to sauté the onion in the olive oil and add the leeks and fennel to soften. Then add the tomato, salt & pepper. When the juices in the port have been absorbed, add the ingredients of the pan into a baking dish. Place the fish (previously cut to slices) in the dish and into the oven and bake at 180oC for 20 minutes. Serve warm.
Enjoy with Vin De Crete White or Ymnos White
